Jigirthanda

I happened to read how to prepare Jigirthanda in Times of India Yesterday.

Below are the steps..

1) Boil the milk until its quantity is reduced by 50%. It helps increase thickness and add to taste. Allow it to cool at room temperature and refrigerate it.

2) Meanwhile soak agar agar in water for 3 hours allowing it to become Jelly Like.

3)Pour half a glass of milk and mix the sarsaparilla(or sarasparitha not sure of spelling) .syrup and agar agar jellies it. A scoop of vanilla ice-cream will then do the trick.
